Amàre brings its Mediterranean formula to Cancún with 429-suite all-inclusive resort

The Spanish hotel group makes its Americas debut with a design-led adults-only property featuring seven restaurants and rooftop infinity pools.

Amàre Hotels opened its first property in the Americas on October 31 with the debut of Amàre Cancún Adults Only All-Inclusive Resort, Curio by Hilton. The 429-suite beachfront property marks the first time Fuerte Group, the family-owned Spanish operator, has ventured outside Spain, and represents the first Curio Collection by Hilton offering in Cancún.

The resort sits at Km 4.5 on Boulevard Kukulcán in the northern section of the Hotel Zone, about 30 minutes from Cancún International Airport and minutes from ferries to Isla Mujeres. Hilton notes that the location occupies a protected bay where water conditions remain calm and clear through most of the year, with natural currents minimizing sargassum accumulation.

Curated across every touchpoint

Amàre has built a following at three European properties—Marbella, Ibiza and Sancti Petri—on the proposition that the Mediterranean represents a lifestyle rather than a destination. The Cancún resort applies that philosophy through specialists overseeing gastronomy, mixology, music, wellness and art. Santiago Gonzalez, the resort’s general manager, said in a statement that the property is designed to feel “social yet unhurried, where gastronomy, wellness, music and meaningful moments come together naturally throughout the day.”

The culinary program draws on two Michelin-starred chefs. Chef Mauricio Giovanini, recognized at Restaurante Messina in Marbella, leads HAYACA, a Latin American and Mediterranean fusion concept making its first permanent home after running as a seasonal pop-up at other Amàre resorts. Chef Jordi Cantó brings expertise from his Michelin-starred work, overseeing multiple restaurant concepts and the signature menu at LA CAVA. Paloma Ortiz, a Mexican cuisine expert, guides the resort’s Mexican culinary program.

The drinks program is shaped by Diego Cabrera, a World’s 50 Best Bars honoree and co-founder of Salmon Guru, along with mezcal specialist Elisa Villarreal and sommelier Meritxell Falgueras, who curates wines and hosts tastings. Adrián Fernández, a Spanish Barista Champion, designed the menu at RITUAL, the lobby coffee house.

Contemporary artists rotate through the property on a regular cycle, so returning guests experience different works each visit.

Dining and facilities

Seven restaurants operate across the resort. The lineup includes HAYACA, plus VITA serving Italian cuisine, BLANC offering French brasserie fare, and SAORI, a Japanese rooftop restaurant on the 29th floor with a sushi bar led by Carlos Navarro, a top-five World Sushi Cup finalist. TEPPAN operates as a show cooking space on the same rooftop level. LA CAVA serves as the signature dining room, while MARE NOSTRUM functions as a Mediterranean-style international buffet with service at breakfast, lunch and dinner. Two additional grills operate poolside and beachside. TEPPAN and LA CAVA carry premium pricing. In-suite dining is available 24 hours.

BELVUE, the rooftop bar, serves The One guests exclusively during the day and opens to all guests for the Sunset Ritual each evening. GLIDE serves the pool, SHIMMER functions as a swim-up bar, and MERIDIAN specializes in craft cocktails. Two 360-degree rooftop terraces with infinity pools, each featuring its own bar and grill, anchor the outdoor experience.

Wellness and The One premium tier

SPA by Germaine de Capuccini operates nine treatment rooms, a bridal suite, hammam, sauna and steam room. The Amàre Gym by Life Fitness runs 24 hours and offers sunrise yoga and meditation.

The One, described as a resort within the resort, integrates premium services across 111 suites positioned on the beachfront and upper floors, with options including Master and Presidential accommodations. Benefits include dedicated VIP check-in, access to a dedicated lounge, priority restaurant reservations, exclusive daytime access to the Belvue Rooftop until 5 p.m., premium in-suite amenities including an elevated minibar selection and Nespresso machines, and a dedicated concierge.

Sylvia Scholey, Hilton’s vice president and global head of all-inclusive and resorts, called the property “a distinctive adults-only experience rooted in Mediterranean culture, design and a true passion for hospitality.” The resort also provides access to Hilton Honors benefits.
